How are you today?
I bring a special kimchi recipe today!
It's young radish leaves kimchi what is called "Yulmu-kimchi" in Korea.
It has really refreshing flavor and crisp texture too.
 
 
 
 
 
 
 
 
 
 1]  Prepare ingredients for today's cook first.
 
 
 
2]  After clean young radish leaves,
cut into 5~6cm size.
You can cut it just by your hands.
And then put 1C salt evenly on it.
 
 
 
 
3]  Cut onion and red pepper for easy to grind.
I suggest cutting about 4cm size.
 
 
 
 4]  This is the important step!
It's time to make seasoning for young radish leaves kimchi!
Put into the grinder next seasonings at once~
 
<3 red pepper,1 onion,1C red pepper powder
4T cooking wine,2T salt,2T ground dried shrimp powder,
2T fish sauce,2C[400ml] water>
 
and then just push the button!
 
The point is using dried shrimps powder!
It helps to make better flavor kimchi!
 
 
 
 5]   This step it to make glutinous rice powder water.
It's important step too.
It's because it take part in fermentation.
In the pot, put <4T glutinous rice powder,4T flour,1.5L water> together.
and boil it in the middle flame to keep mix it for about 10minutes.
 
 
 
 6] This is the perfect result!
You have to check it's sticky concentration.
 
 
 
 7]  And mix it with ground seasoning.
then ferment it about 1 hour.
 
 
 
 8] During the fermentation,
we have to check young radish leaves's condition.
Can you see? It looks salted very well.
And wash it 3times by clean and clod water.
And then remove it's moisture.
 
 
 
 9]  And now(after 1hour later) just mix young radish leaves and
cut carrot with fermented seasoning.
 
 
 
 10] This is the last step!
Just ferment it 12hours in the room temperature,
and 12 hours in the frige again.
It's done now!!
 
 
 
 
 Now just enjoy your delicious young radish leaves kimchi!
 
 
 
Today I introduce a special kimchi recipe.
In Korea, we called it "Yulmu-kimchi".
It has really refreshing taste and little bit sour too.
So it's good to stimulate our appetite!
